Pyaj Kachori – Jodhpur’s Spicy Legacy
A beloved teatime snack from Rajasthan, Pyaj (Onion) Kachori is one of Jodhpur’s most iconic street foods — and for good reason.
Crisp on the outside, flaky like a pastry, and generously filled with a spicy onion and potato masala, it’s hard to describe and even harder to resist. Popular with college students, office-goers, and anyone who knows a good snack when they taste one.
Our recipe comes straight from a three-generation-old kachori shop in Jodhpur — unchanged, uncompromised.
Pairs beautifully with chai, coffee, wine, or even a cold beer.
